Named after the state flower of Texas, Bluebonnet Barbecue is the passion project of chef Chris Terlikar, a Melbourne native who mastered the art of American Barbecue after a stint of training in the United States with renowned Pitmasters Tom Micklethwaite and Evan LeRoy.

Evolving from a pop up, to a food truck, to a permanent site, Bluebonnet Barbecue has lived multiple lives since its inception in 2013. From its first home in Collingwood, to North Fitzroy and finally, its permanent site in Brunswick East, Bluebonnet has stayed true to its roots, bringing authentic Texas Barbecue to the people of Melbourne.

 Our 100% wood fired Ole Hickory Pit smoker, imported from the USA, can cook half a tonne of meat per day. Our meats are all free range.

 Our bar, built from reclaimed bridge sleepers, is home to an extensive collection of over 100 Ryes, Bourbons and American Whiskeys, and bartenders who love to talk about them.
